Physics

Why ice can cool more strongly

Ice absorbs heat as it warms and also during melting. Solid chilling stones do not undergo this phase change. In a peer-reviewed study of granite, soapstone and ceramic, ice cubes therefore produced substantially stronger cooling under the tested conditions.
